Apple pancakes (light and vegan)

I don’t know about you but I confess that at the very thought of a steaming cup of coffee and a greedy tower of pancakes to give me a good morning, I jump out of bed like a cricket! The call of breakfast is so strong that I just can’t entertain myself under the sheets for very long. Most of the time I delay, yawn, reconnect my brain wondering “where am I? who I am? what are they? “, but it doesn’t last more than 5 minutes (let’s say 10, come on! 😉) because I know that something good is waiting for me …

The version of the apple pancakes today is one light and vegan recipe, perfect to enjoy at any time of the day and suitable for the whole family! Obviously I used the apples, the ideal fruit to use in this new autumn season. To make them super soft and fragrant, I used the Koro apple mousse, an added value for our recipes that smell of home and autumn!

It differs from apple mousse which we usually find at the supermarket because it is made up of organic fruit only and is devoid of any other ingredient. Apple pancakes

Apple pancakes are light because they are without eggs, milk and butter but at the same time delicious enriched with chocolate chips! Ideal at any time of the day.

Preparation time 10 minutes
Cooking time 5 minutes


  1. In a bowl, add the milk (or vegetable drink), oil and apple mousse. Mix quickly with a hand whisk to combine all the ingredients.

  2. Sift the flour and instant yeast and add to the mixture. Flavor with a level teaspoon of cinnamon (or the flavor you prefer) and mix it too with the mixture.

  3. Once you have obtained a smooth and homogeneous dough, grease the bottom of a non-stick pan with a drizzle of oil and remove the excess with absorbent paper. Wait for the pan to heat up well and pour in a couple of tablespoons of pancake batter.

  4. Wait about 2 or 3 minutes, the time for bubbles to form on the surface. Turn the pancake over and cook on the other side for another 2 or 3 minutes. Continue until all the dough is used up and stack the pancakes on a serving dish. You can decorate the finished pancakes with powdered sugar, maple syrup, honey or whatever you prefer!

  • You can add chocolate chips to the dough or pieces of apple.

If you don’t have apple mousse, cook two apples cut into slices without peel in a pan with a glass of water and a pinch of cinnamon (or lemon zest). Cook for about 10-15 minutes. They must be very soft. Blend until you get a smooth and silky mousse!

My advice? Decorate the pancakes with pieces of apple cooked in a pan together with a knob of butter, cinnamon and a tablespoon of brown sugar. Cook for 5 minutes, the time for the sugar to melt and pour over the pancakes. Add chopped hazelnuts and go crazy for goodness! 😉
