The basmati rice with vegetables it’s a Thai recipe which I revisited to make it easy and fast. It is a very good single dish!

How I miss Asia! I believe it is among the most fascinating and magical continents. Just land in one of the many Asian places and you are instantly catapulted into a new reality. I love everything about Asia: the people, the mysticism, the scents, the culture and the food. In the past years in which I have, fortunately, traveled a lot I have been able to visit some very unique places including the Thailand. Bangkok, for example, has remained in my heart and I just need to close my eyes to be able to travel through memories and be there with my mind, among those streets so full of folklore and life.

Not to mention the beaches of the Thai islands: such a sea is impossible to forget! It is difficult for Thailand not to forcefully enter the hearts of visitors and I can say with certainty, years later, that I have let it enter with all its magic because the heart is not commanded

In these days, taken by nostalgia (is it that summer is imminent?), I leafed through the album of Thai memories and I felt like eating something typical. There Asian cuisine, contrary to what one might think, it is rich in taste, aromas and flavors. In Thailand I tried everything and there was nothing that did not satisfy me. In those days of staying in Koh Samui I was crazy about the basmati rice with vegetables. It is a very simple but not trivial typical dish.

To make it affordable for everyone, I revisited it using our vegetables, turmeric, to give it that ethnic soul and excellent basmati rice that came straight from me Koro. Basmati rice with vegetables

Basmati rice with vegetables is a very tasty and light Thai recipe. Try the simplified version ready in minutes!

Preparation time 10 minutes
Cooking time 20 minutes


  1. Heat a tablespoon of extra virgin olive oil in a pan and add the chopped onion. Brown for 1 minute and add the peas and green beans. Stir and add 1 glass of water to let it cook.

  2. In the meantime, clean and peel the carrots, cut into slices and add them to the rest of the vegetables. Cook everything together until they are soft enough to be skewered by the prongs of a fork.

  3. Once the vegetables are ready, season with salt and pepper and add a pinch of turmeric. Stir to mix.

  4. Aside, rinse the rice under running water to remove some of the starch and then place it in a pan with some water. Cook for about 10 minutes, drain the excess water and add the rice to the vegetables.

  5. Sauté everything for a couple of minutes, then season with salt if necessary and season with two tablespoons of extra virgin olive oil. Serve!

  • You can prepare the vegetables in advance, even the day before and add them to the rice at the moment of use.
  • Have fun changing the type of vegetable to the one you prefer. It will always be delicious!
  • If you don’t like turmeric you can omit it or replace it with saffron.
