Hot milk cake, apples and hazelnuts: a very soft recipe!

There hot milk cake, apples and hazelnuts it’s a soft and tasty cake perfect to be enjoyed at any time. And the variant of the classical Apple pie (the one with butter that my grandmother always used to make) and it differs in the procedure because the warm milk on the whipped egg. It is the secret to one super soft recipe and true lust!

If up to two years old they had told me that I was going to become a diehard autumn fan, I would have exclaimed: “No, I could never betray the summer for a cold season”. Yet, here I am! I have revolutionized myself and my way of seeing things thanks to this new love that has just blossomed! Now I repeat to myself how I have done so far not to notice how beautiful autumn is with its colors and scents!

First of all, I love the succession of changes that affect nature. The trees are colored with warm tones, the air becomes fresher, the sun softer and I feel a certain pleasure in observing this sudden and completely natural change motionless. I observe and repeat to myself that if I have been able to particularly appreciate this season of which I was indifferent, I can even change my attitude towards things that happen. Because everything happens, as for nature it also happens for us. Just letting go, just being an integral part of the change. Only in this way can you have access to the road to lightness, that same lightness that distinguishes the leaves that fly and hover in the air… Yes, I really like this autumn so much!

And the undisputed protagonists of the season are certainly the apples which, finally, are back to enrich our tables and (above all) sweets! I could never get tired of churning out one Apple pie and for this time I wanted to make it even softer thanks to a secret ingredient: the warm milk! In fact, this cake is particularly soft thanks to the addition of the latter on the egg whip.

Hot milk cake, apples and hazelnuts

The hot milk, apple and hazelnut cake is perfect at any time of the day. It is very soft and can be prepared in a few minutes!

Preparation time 20 minutes
Cooking time 40 minutes


Instructions

  1. Preheat the oven to 180 ° static mode, 170 ° if ventilated. Heat the milk in a saucepan. It must be hot and not hot! On the side, work the eggs together with the sugar for about 5-10 minutes with an electric whisk. You will need to get a frothy mixture.

  2. Keep working and add the vanilla extract and hot milk a little at a time.

  3. Sift the flour, starch and baking powder and add to the egg mixture. Incorporate everything with the electric whisk at a low speed.

  4. On one side, clean the peel and core from the apples and cut 3 into cubes. Add to the mixture with a spatula or wooden spoon.

  5. Oil and flour a 20 cm mold (alternatively you can use the spray remover, baking paper or butter and flour) and pour the mixture. Cut the remaining apple into thin slices and arrange on the surface without pushing down.

  6. Add the coarsely chopped hazelnuts with a knife and a pinch of cinnamon if you like. Bake in a preheated oven for about 40-45 minutes (35 minutes if ventilated). Before taking it out of the oven, do the toothpick test and continue cooking by covering the cake with a sheet of aluminum foil.

  7. Once cooked, take out of the oven and let it cool for about 30 minutes before serving. Enjoy your meal!

  • It can be kept soft and moist for up to three days if closed under a glass jar for sweets.
  • You can replace the hazelnuts with the dried fruit of your choice.
  • If you don’t like dried fruit you can omit them or replace them with chocolate chips.
