Summer and summer time desserts without cooking! How good and easy are they to prepare? Well, I would say infinitely because within everyone’s reach, everyone likes them and they solve all problems! 😉

Yes they prepare in just 5 minutes with the easy, quick recipe and without cooking and they are really yummy. Just mix the ricotta with the sugar, add the coconut flour and cocoa. Et voilà, that’s it! THE ricotta, coconut and chocolate truffles they are ready to be tasted and served to your guests. I assure you that they will be conquered!

Ricotta, coconut and chocolate truffles

Quick and easy, they are prepared in just 5 minutes and are delicious!

Preparation time 5 minutes


  1. Mix the ricotta with the sugar in a bowl until you get a smooth and silky cream. Add the coconut flour and mix to mix everything.

  2. Divide the mixture into two parts: in one part add the grated lemon rind and the other the cocoa. Mix both to obtain a homogeneous mixture.

  3. The dough must be malleable in your hands and compact. If necessary, add more coconut flour if it is too liquid. This depends on the type of ricotta you use.

  4. Shape into balls the size of a walnut in your hands and pass them on a plate in which you have placed more coconut flour. You will have to get a tartufino covered with coconut flour in a homogeneous way.

  5. Arrange the truffles obtained in a tray and place in the fridge to harden for about 30 minutes.

  • They can be kept in the fridge for at least 5 days if closed in an airtight container.
  • You can prepare them 1 day in advance before serving them to our guests.

The extra idea? Add a hazelnut or a whole almond to the center of each truffle before giving it the final shape. You will have prepared some delicious chocolates like Raffaello! 😉
