Spinach and egg salad: summer recipe


How much desire to cook do you have at this particular time of the year? I see you all responding in unison “Very little!”. And how to blame you? Even the most ardent in the kitchen are starting to give up in these weeks of scorching heat and with the last few jokes before the holidays.

Whether or not you are part of the group of people who go on vacation in August, it doesn’t matter. Each of us, at this time of the year, feels the need to unplug and resume much slower rhythms. Well, I’m with you! And for this reason today I leave you one recipe not recipe of a single dish that is prepared with a minimum of effort and very few pretensions. But don’t think that I forget to share the goodness with you because it will also be easy to make, but nobody likes to give up on taste! 😉

One of my favorite summer dishes is definitely a nice one salad which contains all the flavors I love the most. There are times when I use the grilled chicken of the day before (because nothing is thrown away here 😉), or steamed salmon fillets or, as in this case, hard-boiled eggs that I cooked a few hours in advance to amortize times. The summer salads they can be composed with multiple ingredients, each of them dictated by our imagination. Personally, I like to open the fridge and add everything I love following my instinct and my personalization. For today’s dish, therefore, I opted for a fresh and tasty one spinach and egg salad to which I added pitted green olives, a tablespoon of Koro organic vegan mayonnaise and a handful of Koro salad seed mix.

Spinach and egg salad

The spinach and egg salad is a perfect single dish for the summer! It can be customized as you prefer and is ideal to be consumed both for lunch and for a light and tasty dinner.

Preparation time 10 minutes
Cooking time 8 minutes


  1. Wash the fresh spinach (or lettuce) well, dry and place in a large bowling alley. Aside, boil the eggs in a pan with some water and, once the water starts to boil, cook for 8 minutes.

  2. Remove the boiling water from the pan and pass the eggs under the jet of cold water. Shell them and cut into two parts. Add to the spinach.

  3. Season everything with oil, seeds, olives, salt and pepper. Stir to mix and serve!

  • You can replace eggs with plain canned tuna, grilled canned salmon fillets, smoked salmon, grilled chicken breast, feta cheese or whatever you like!
  • Spinach can be substituted with any lettuce of your choice.
  • Customize your salad however you like

If you are vegan, replace animal proteins with vegetable proteins such as tofu or Koro organic chickpeas
