Sweet roll without cooking: chocolate and pistachio


The sweet roll without cooking it’s a fresh and tasty idea, ready in minutes! It is the variant without cooking of the classic cookie dough roll and is made by mincing very simple dry biscuits. No one will be able to resist his goodness!

Over the years I have experimented with many recipes and undoubtedly among the most popular is the biscuit roll without baking. I proposed a similar recipe about 3 years ago, on the occasion of a very sweet collaboration with Pan of stars for which I enjoyed creating various recipes later renamed “Star recipes“. I remember it was a beautiful project but, above all, it was very greedy! 😉

So, to end this working year with a flourish before the summer holidays, I thought: why not get inspired by sweet roll without cooking tried some time ago? And so the even tastier version of the sweet roll without cooking chocolate and pistachio!

For the realization of the pistachio cream I used the Koro pistachio cream, a real lust! It is a spreadable cream with a creamy, smooth and silky consistency and is composed of 100% pistachios shelled. Think that pistachio trees can have a long life of 300 years and can reach a height of 12 meters in the course of their life. Sweet roll without cooking with chocolate and pistachio

The no-bake sweet roll is the perfect idea for a quick and tasty dessert. It is prepared with chopped biscuits and is filled with a delicious pistachio cream!

Preparation time 15 minutes


  1. Finely chop the cookies in a robot or place them in a plastic bag and beat a rolling pin repeatedly until powdered. Melt the butter and, once it has cooled, pour over the biscuits. Also add the milk and mix everything to mix.

  2. Roll out the cookie dough into a fairly long sheet of cling film and form a fairly precise rectangular base.

  3. Eliminate the edges with a knife to try to get a fairly precise rectangle. Place the cream in the center, leaving the edges of 1 cm free.

  4. Roll up the roll on itself with the help of the film, being careful not to let it split. Seal with the film itself and place in the fridge to harden for 3 hours.

  5. Before serving, put the roll in the freezer for 15 minutes. Then remove the film and remove the initial and final part. Cut into 1 cm thick slices and decorate with chopped pistachios. Serve immediately!

  • The chocolate and pistachio sweet roll can be prepared one day in advance and left in the fridge overnight. It will be even better!
  • Store leftovers in the fridge in an airtight container.
