Vegan omelette without eggs

The vegan omelette without eggs is a kind of farinata but very popular to prepare and is perfect when there is no eggs in the house or if you have a vegan diet or egg intolerances. Try the easy and tasty recipe!

  1. Combine the sifted chickpea flour in a bowl and add the turmeric, a pinch of salt and pepper if you like. Stir with a hand whisk to combine. Pour in the water a little at a time as you work.

  2. You will need to obtain a smooth and homogeneous mixture, without lumps. Once you have a silky batter, set aside and take care of the vegetables.

  3. Clean the hard stemmed broccoli and divide into florets. Leave to steam (or in a pan with lightly salted water) for about 10-15 minutes. They should be crunchy and not too soft.

  4. Drain the water and let it cool. In the meantime, heat the oven to 180 ° in static mode (170 ° if ventilated). Grease the bottom of a 22×22 square or 22 cm round baking dish with a drizzle of extra virgin olive oil and add the chickpea batter. Arrange the broccoli and crumbled feta cheese in a scattered way.

  5. Decorate with sesame seeds (or whatever you prefer) and bake in a preheated oven for about 35 minutes. It must be golden! Remove from the oven and serve.
